School means a different kind of creativity to me –
breakfast, lunch, snacks, dinners with minimal prep and cook time. I started searching the web for ideas and a
variation of this smoothie
sounded good – 2 out of 3 kids concurred.
I cut up the strawberries and bananas the night before and placed them
in the freezer in a Tupperware container.

I sent chips and guacamole in the kids’ lunchboxes.
Ingredients:
Strawberry-Banana Smoothie |
1.
1 cup vanilla or strawberry yogurt
2.
1 cup frozen strawberries, stems removed
3.
1 frozen banana, cut into bite size pieces
4.
½ cup orange juice
Place all ingredients in a blender. Puree until smooth.
Tips: Use more or less orange juice to vary thickness. Try strawberry yogurt for added
fruitiness. Some recipes used pineapple
juice instead of orange or blueberries or raspberries as fruit alternatives or
additions.

We put bananas that start going soft in the freezer to have on hand for smoothies. We love using the vanilla yogurt.
How do you keep the guacamole from getting brown during day in their lunch?
Check you out with that clever idea for bananas going soft. I always used it as an excuse to make banana bread but I like this alternative!
I bought the guac from Whole Foods. It is bright green - I'm assuming (aka, hoping) that they use lemon or lime juice to keep it from going brown faster than mine without the pit sitting in the middle.
I also used some of the guac on their turkey and cheese lavash sandwich/roll-up. Can't wait to hear the feedback on that!
